Happy Vegan Trails Cookies
A delicious cookie-version of a tasty & cruelty-free trail mix indulgence!
Next time you hit the trails (or veg on the couch for 6 hours), be sure to whip up a fresh batch of these babies to take in natureโs beautiful views (or your ๐บ๐คฃ). Simple ingredients, GF, & easy to make! Join me in the kitchen to make these delicious & healthy-ish cookies!๐ช
Ingredients:
1 cup applesauce
ยผ cup avocado oil
1 flax egg (per โeggโ: mix 1 tablespoon flax meal with 3 tablespoons water. Set aside for 5 or more minutes.)
ยผ cup sweetner of choice (ie: agave, coconut nectar, dark maple syrup, etc... I use dark maple syrup.)
1 cup or 2 mashed ripe bananas
ยฝ cup raw or roasted cashew butter
1 teaspoon vanilla extract
1 cup super fine almond flour
2 cups old-fashioned oats
1 teaspoon celtic salt or sea salt
2 teaspoons cinnamon
1 ยฝ cups dark chocolate chips or any vegan chocolate chips
2/3 cup chopped walnuts
2/3 cup fine shredded coconut
2/3 cup dried cherries
Directions:
Set oven to 350 degrees.
Mix wet ingredients in large bowl using a high-speed mixer: applesauce, avocado oil, flax egg, coconut nectar, mashed bananas, raw cashew butter & vanilla.
Mix dry ingredient in separate bowl: almond flour, oats, sea salt & cinnamon.
Combine wet & dry ingredients & mix thoroughly.
Mix in chocolate chips, walnuts, coconut flakes & cherries.
Use a cookie dough scooper or spoon to scoop balls of dough onto a greased pan.
Bake 15-18 minutes.
Flatten each cookie with a spatula.
Eat entire batch of cookies within 24 hours, like I did.๐
