Peach-Berry Cobbler

You will ap-peach-iate this healthy dessert berry much!


This is a healthy-ish version of cobbler & tastes fantastic with a scoop of vanilla ice cream.๐Ÿ™Œ๐Ÿผ

Did these fall from the heavens above in the sky?

A little crumble to sweetly layer on top...
Bake โ€˜em up nice, so the flavors pop!

Ingredients:

  • 4-6 sliced peaches

  • 2 small pints of blackberries, blueberries &/or raspberries

  • 1 1/4 cups almond flour

  • 2 cups oats

  • 1/4 teaspoon sea salt

  • 1/3 cup avocado oil

  • 1/4 cup natural sweetener of choice (maple syrup, agave, coconut nectar, date syrup, etc.)

  • 1 1/2 teaspoons vanilla

  • 1 heaping tablespoon cinnamon

Directions:

  1. Set oven to 350ยฐF.

  2. In a large bowl, mix almond flour, oats, sea salt, avocado oil, sweetener, vanilla & cinnamon.

  3. In a 9x13 baking dish, start the first layer using 1/3 of mixed crumble.

  4. Add a second layer using 1/2 of the sliced peaches, blackberries & blueberries.

  5. Repeat step 3 to add third layer.

  6. Repeat step 4 to add fourth layer.

  7. Repeat step 3 to add fifth & final layer.

  8. Bake in oven for 45-55 minutes until golden brown.

    *Serve warm with vegan vanilla ice cream.๐Ÿจ
