Avo’ Super Day Superfood Salad

Ingredients:
Mixed greens
1 cup cooked quinoa (preferably hot)
1/4 cup whole raw cashews
1/4 cup raw pumpkin seeds
1/4 cup dried cranberries
1/4 cup goji berries
2 sliced avocados
One 8 oz. container of Spicy Avocado Hummus (Hope Hummus)
Directions:
Cook quinoa on stovetop.
After quinoa is cooked, use a large bowl to combine mixed greens, hot quinoa, avocado, cashews, pumpkin seeds, cranberries, goji berries, & hummus.
Mix thoroughly (make sure the quinoa is hot to help soften the hummus into a dressing/sauce.)
