Ingredients:

  • Mixed greens

  • 1 cup cooked quinoa (preferably hot)

  • 1/4 cup whole raw cashews

  • 1/4 cup raw pumpkin seeds

  • 1/4 cup dried cranberries

  • 1/4 cup goji berries

  • 2 sliced avocados

  • One 8 oz. container of Spicy Avocado Hummus (Hope Hummus)

Directions:

  1. Cook quinoa on stovetop.

  2. After quinoa is cooked, use a large bowl to combine mixed greens, hot quinoa, avocado, cashews, pumpkin seeds, cranberries, goji berries, & hummus.

  3. Mix thoroughly (make sure the quinoa is hot to help soften the hummus into a dressing/sauce.)
