Ingredients:

  • 2 lbs. diced sweet potatoes

  • 1/2 cup melted vegan butter

  • 3 tablespoons orange juice

  • 1 teaspoon cinnamon

  • Pinch of nutmeg

  • Pinch of ground cloves

  • Pinch of celtic salt or sea salt

  • 1 10-ounce bag vegan marshmallows (I use Dandies Vegan Marshmallows.)

Directions:

  1. Preheat oven to 350.

  2. Boil diced sweet potatoes on stovetop for 15-20 minutes.

  3. Whisk melted butter, sugar, orange juice, cinnamon, nutmeg, ground cloves, & salt.

  4. Strain potatoes & mash using a mixer or high-speed blender while adding sweetened butter.

  5. Using a 9x13 baking dish, spread mashed potatoes evenly & add marshmallows on top.

  6. Bake 35 minutes until marshmallows are golden brown.

Serenade the dish with love & then indulge.
